  • 1 cup all-purpose flour

  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup whole milk
  • 1 tablespoon honey (optional for extra sweetness)
  • 810 standard hot dogs, cut into halves or thirds
  • Wooden skewers or sturdy toothpicks
  • Vegetable oil for frying
  • Extra flour for dusting

Instructions

  1. Step 1: Heat the Oil: Fill a large deep skillet or a heavy-bottomed pot with about 2 to 3 inches of vegetable oil. Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy or deep-fry thermometer to ensure the temperature is accurate for even cooking.
  2. Step 2: Prepare the Hot Dogs: Cut each hot dog into three equal pieces. Use paper towels to pat each piece completely dry. This is crucial as the moisture will prevent the batter from sticking. Insert a toothpick or small skewer into the end of each hot dog piece.
  3. Step 3: Mix the Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined and there are no large lumps.
  4. Step 4: Add the Wet Ingredients: Add the egg, milk, and honey to the dry mixture. Whisk everything together until the batter is smooth. Let the batter sit for about 5 minutes; this allows the cornmeal to hydrate and the batter to thicken slightly.
  5. Step 5: Coat the Hot Dogs: Lightly dust the hot dog pieces in a little bit of extra flour, shaking off the excess. Pour your batter into a tall glass or jar. Dip each hot dog piece into the batter, ensuring it is fully coated, and let the excess drip off for a second.
  6. Step 6: Fry Until Golden: Carefully drop 4-5 battered hot dogs into the hot oil at a time. Fry for about 2 to 3 minutes, turning them occasionally with tongs, until they are golden brown on all sides. Do not overcrowd the pot.
  7. Step 7: Drain and Cool: Use a slotted spoon to remove the mini corn dogs from the oil and place them on a plate lined with paper towels to drain. Let them cool for a minute or two before serving.
