Step 1: Drain and Dry: Start by draining the chickpeas into a colander and rinsing them thoroughly under cold water. The most important step for crispiness is drying them well. Spread the chickpeas out on a clean kitchen towel or paper towels and pat them dry. Remove any loose skins that come off during this process, as they can burn easily in the oven.
Step 2: Seasoning the Chickpeas: Preheat your oven to 400°F (200°C). In a large mixing bowl, whisk together the olive oil, chili powder, cumin, garlic powder, onion powder, cayenne pepper, and salt. Add the dried chickpeas to the bowl and toss them until every single chickpea is evenly coated with the oil and spice mixture.
Step 3: Roasting to Perfection: Line a large baking sheet with parchment paper or a silicone mat. Spread the chickpeas out in a single layer, ensuring they are not crowded. Place them in the oven and roast for 35 to 40 minutes. Halfway through the cooking time, take the pan out and give it a good shake to ensure even browning on all sides.
Step 4: Cooling for Crispiness: Once the chickpeas are dark golden and crunchy, remove them from the oven. For the best texture, turn off the oven and let them sit inside with the door slightly cracked for another 5-10 minutes. This helps draw out any remaining moisture.
