8 ounces fresh mozzarella pearls or small bocconcini balls
1 bunch fresh basil leaves
2 tablespoons high-quality balsamic glaze
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper to taste
12 to 15 small wooden skewers or toothpicks
Instructions
Start by washing the cherry tomatoes and the fresh basil leaves under cold water. Pat them dry thoroughly with a paper towel. If you are using larger bocconcini balls, you may want to cut them in half, but mozzarella pearls can be used as they are. Lay everything out on a clean workspace to make the assembly faster.
Take a skewer and slide on a cherry tomato. Next, take a medium-sized basil leaf, fold it in half or thirds, and slide it onto the skewer. Follow the basil with a mozzarella ball. If your skewers are long enough, you can repeat this pattern once more. Continue until all the ingredients are used and the skewers are fully assembled.
Arrange the completed skewers on a serving platter. Drizzle the extra virgin olive oil evenly over the tomatoes and cheese. Sprinkle with a pinch of salt and a few cracks of black pepper. Just before serving, drizzle the balsamic glaze in a decorative zigzag pattern across the entire platter for a professional look.
