Instructions
In a large pot or Dutch oven over medium-high heat, add the ground beef and diced onion. Cook until the beef is fully browned and the onions are translucent, breaking the meat into small crumbles with a wooden spoon. Drain any excess grease from the pot.
Add the minced garlic to the pot and cook for about 1 minute until fragrant. Stir in the taco seasoning and the dry ranch dressing mix, ensuring the meat is evenly coated with the spices.
Pour in the black beans, corn, diced tomatoes with green chilies, beef broth, and tomato sauce. Stir everything together until well combined.
Bring the soup to a gentle boil, then reduce the heat to low. Cover the pot and let the soup simmer for 15 to 20 minutes to allow the flavors to blend. Taste and adjust seasoning if necessary before serving hot.
