Step 2: Sauté the Aromatics – While the beans are drying, heat a small skillet with a drop of oil. Add the minced onion and garlic, sautéing for 3-5 minutes until they are soft and fragrant. Let them cool slightly before adding to the mix.
Step 3: Mash and Mix – Place the dried beans in a large bowl. Use a fork or a potato masher to mash them until about 70% of the beans are broken down, leaving some whole for texture. Add the sautéed onion, garlic, egg, breadcrumbs, cumin, chili powder, paprika, salt, and pepper.
Step 4: Form the Patties – Stir the mixture until well combined. Divide the mixture into four equal portions. Use your hands to shape them into round, flat patties about 1 inch thick. If the mixture feels too wet, add another tablespoon of breadcrumbs.
Step 5: Cook the Burgers – Heat olive oil in a large non-stick skillet over medium heat. Place the patties in the pan and cook for 4-5 minutes per side. You are looking for a nice browned crust and a heated interior. Serve immediately on toasted buns.
