  1. Step 1: Prep the Oven and Pumpkin Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. Take your pumpkin puree and blot it with a paper towel to remove excess moisture. This ensures the cookies stay soft rather than becoming too wet or cake-like.
  2. Step 2: Cream Butter and Sugars In a large mixing bowl or the bowl of a stand mixer, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed until the mixture is light and fluffy. This should take about 2 to 3 minutes.
  3. Step 3: Add Wet Ingredients Add the egg yolk, blotted pumpkin puree, and vanilla extract to the butter mixture. Beat until well combined, scraping down the sides of the bowl as needed to ensure everything is incorporated.
