  • 1 cup unsalted butter, melted and slightly cooled
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 11 oz soft caramels, unwrapped (about 1 bag)
  • 3 tablespoons heavy cream
  • 1 teaspoon flakey sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on the sides to easily lift the brownies out later. Lightly grease the parchment paper with cooking spray or butter.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract. Sift in the cocoa powder, flour, and salt. Fold the dry ingredients into the wet ingredients using a spatula until just combined. Fold in the chocolate chips.
  3. Spread half of the brownie batter into the prepared baking pan. Smooth the top with a spatula. Place in the oven and bake for 15 minutes. This creates a solid base for the caramel layer.
  4. While the first layer is baking, place the unwrapped caramels and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the mixture is completely smooth and melted.
  5. Remove the pan from the oven. Pour the melted caramel over the baked brownie layer, spreading it to the edges. Carefully drop spoonfuls of the remaining brownie batter over the caramel and gently spread it to cover the caramel as much as possible. Return the pan to the oven and bake for another 20 to 25 minutes.
  6. Remove the brownies from the oven. While they are still warm, sprinkle the flakey sea salt evenly over the top. Allow the brownies to cool completely in the pan for at least 2 hours. For the best results and clean cuts, chill them in the refrigerator for 1 hour before slicing.
