In a large mixing bowl, stir together the creamy peanut butter and the melted butter until smooth. Gradually add the powdered sugar and graham cracker crumbs. Mix until the dough is firm and well-combined. It should feel like thick playdough.
Scoop about two tablespoons of the peanut butter mixture at a time. Roll it into a ball, then flatten it slightly and pinch the ends to create an oval “football” shape. Place each shaped piece onto a baking sheet lined with parchment paper.
Place the baking sheet in the refrigerator for at least 30 to 45 minutes. Chilling the peanut butter centers is essential so they don’t fall apart or melt when you dip them into the warm chocolate later.
In a microwave-safe bowl, combine the chocolate chips and the coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely smooth and melted. The oil helps the chocolate stay glossy and prevents it from cracking when you bite into it.
Using a fork, dip each chilled peanut butter football into the melted chocolate. Let the excess chocolate drip off before placing the bar back onto the parchment-lined sheet. Repeat until all footballs are coated.
Return the chocolate-covered bars to the refrigerator for about 20 minutes until the chocolate is firm. Once set, use the white icing to draw laces on the top of each football. Serve immediately or store for later.
