4 cups mixed berries (blueberries, raspberries, blackberries, and sliced strawberries)
1 cup granulated sugar (divided)
1 tablespoon lemon juice
1 teaspoon cornstarch
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup whole milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish or a 2-quart casserole dish with butter or non-stick cooking spray to prevent sticking.
In a medium bowl, gently toss the mixed berries with 1/4 cup of the sugar, the lemon juice, and the cornstarch. The cornstarch helps thicken the juices as they bake. Spread the berry mixture evenly across the bottom of the prepared baking dish.
In a separate large bowl, whisk together the flour, the remaining 3/4 cup of sugar, baking powder, salt, and cinnamon. Add the melted butter, milk, and vanilla extract. Stir until the mixture is just combined. Be careful not to overmix, as this can make the topping tough.
Drop spoonfuls of the batter over the top of the berries. You do not need to cover the fruit completely; the batter will spread as it bakes, creating a beautiful “cobbled” look with fruit peeking through.
Place the dish in the oven and bake for 40 to 45 minutes. The topping should be golden brown, and the fruit juices should be bubbling around the edges. Insert a toothpick into the crust to ensure it is cooked through.
Remove the cobbler from the oven and let it cool for at least 10 to 15 minutes before serving. This allows the fruit sauce to thicken slightly.
