  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated white sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure even browning.
  2. In a large mixing bowl, beat the softened butter, white sugar, and brown sugar together using an electric mixer on medium-high speed. Continue for about 2 minutes until the mixture is light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract to the butter mixture. Beat again on medium speed until well combined. Don’t worry if the mixture looks slightly curdled; this is normal when adding pumpkin.
  4. In a separate medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt. This ensures the leavening agents and spices are evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients. Mix on low speed just until no more streaks of flour remain. Avoid overmixing, as this can make the cookies tough.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10 to 12 minutes, or until the edges are set and the tops spring back slightly when touched. Let them cool on the pan for 5 minutes before transferring to a wire rack.
  7. While the cookies cool, whisk together the powdered sugar, maple syrup, and milk in a small bowl. The glaze should be thick but pourable. If it is too thick, add a few more drops of milk.
  8. Once the cookies are completely cool, drizzle the maple glaze over the tops using a spoon or a small piping bag. Allow the glaze to set for about 15 minutes before serving.
