  • 2 ½ cups all-purpose flour

  • ¾ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 cup sour cream or Greek yogurt
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups fresh blueberries
  • 1 tablespoon flour (to coat the berries)
  • 4 oz cream cheese, softened (for frosting)
  • ¼ cup butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tablespoon lemon juice (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan with butter or non-stick cooking spray to ensure the cake does not stick.
  2. In a medium-sized mixing bowl, whisk together the 2 ½ cups of all-purpose flour, baking powder, baking soda, and salt. Set this mixture aside for later use.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using an electric mixer.
  4. Add the eggs one at a time, beating well after each addition. Mix in the lemon zest and 2 tablespoons of lemon juice until fully incorporated.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix just until combined; do not overmix the batter.
  6. In a small bowl, toss the blueberries with 1 tablespoon of flour to prevent them from sinking to the bottom of the cake. Gently fold the berries into the batter using a spatula.
  7. Spread the batter evenly into the prepared 9×13 pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
  8. To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and lemon juice, beating until fluffy. Spread the frosting over the cooled cake before serving.
