  • 1.5 cups graham cracker crumbs
  • 1/3 cup melted unsalted butter
  • 1/4 cup granulated sugar
  • 2 cans (14 oz each) sweetened condensed milk
  • 4 large egg yolks
  • 3/4 cup Key lime juice (fresh or bottled)
  • 2 teaspoons lime zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a slight overhang on the sides. This will make it much easier to lift the bars out of the pan once they are chilled.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of your prepared pan using the back of a spoon or a flat glass.
  3. Place the pan in the oven and bake the crust for 10 minutes. This step is important because it prevents the crust from becoming soggy once the filling is added. Remove from the oven and let it cool slightly while you prepare the filling.
  4. In a large bowl, whisk the egg yolks and the lime zest together for about 2 minutes until they look pale. Add the sweetened condensed milk and whisk until smooth. Finally, stir in the lime juice until completely incorporated.
  5. Pour the lime mixture over the pre-baked crust and spread it evenly. Return the pan to the oven and bake for 15 minutes. The edges should be set, but the center should still have a slight jiggle. Do not overbake.
  6. Allow the bars to cool completely at room temperature on a wire rack. Once cooled, place the pan in the refrigerator for at least 3 hours, or ideally overnight. This allows the filling to set properly for clean slicing.
