1 cup semi-sweet chocolate chips (plus extra for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray. For even easier removal, you can line the bottom and sides with parchment paper, leaving a small overhang on the edges.
In a medium-sized mixing bowl, sift together the all-purpose flour and cocoa powder to remove any lumps. Add the baking soda, baking powder, salt, and pumpkin pie spice. Whisk everything together until the mixture is a uniform color and set it aside.
In a large mixing bowl, combine the pumpkin puree, granulated sugar, and oil. Use a whisk or an electric mixer to blend them until smooth. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Gradually add the dry ingredients into the wet ingredients. Use a spatula or wooden spoon to gently fold the mixture together. Be careful not to overmix; stop as soon as no more streaks of flour are visible. Overmixing can lead to a tough, dense bread.
Gently fold in one cup of semi-sweet chocolate chips. Spread the batter evenly into the prepared loaf pan. If desired, sprinkle a few extra chocolate chips over the top for a professional, bakery-style look.
Place the pan in the center of the oven and bake for 55 to 65 minutes. To check for doneness, insert a toothpick into the center of the loaf. It should come out clean or with just a few moist crumbs. If the toothpick has wet batter on it, bake for another 5 minutes and check again.
Allow the bread to cool in the pan for about 10 to 15 minutes. This helps the structure set. Then, carefully lift the bread out and place it on a wire rack to cool completely before slicing. This prevents the bread from crumbling when cut.
