  • 1/4 cup Unsweetened cocoa powder
  • 1/4 cup Maple syrup, honey, or preferred liquid sweetener

Instructions

  1. Place the cottage cheese, cocoa powder, and your chosen sweetener into a high-speed blender or a food processor. Ensure the lid is secured tightly before starting.
  2. Blend the mixture on high speed for about 1 to 2 minutes. You want to keep blending until all the cottage cheese curds have completely vanished and the mixture looks glossy and aerated.
  3. Taste the mousse and adjust the sweetness if necessary. If you prefer a deeper chocolate flavor, you can add an extra tablespoon of cocoa powder and pulse again to incorporate.
  4. While you can eat it immediately, the texture improves significantly if you transfer the mousse into small bowls and refrigerate for at least 30 minutes. This allows the mousse to firm up and the flavors to meld.
