  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 21 ounces cherry pie filling (one standard can)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan with butter or non-stick cooking spray. You can also line it with parchment paper for easier removal.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using an electric mixer.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and almond extract until fully combined.
  4. Gradually add the flour and salt to the wet mixture. Mix on low speed until just combined. The dough will be thick and slightly sticky.
  5. Spread about two-thirds of the dough into the bottom of your prepared baking pan. Use a spatula or dampened fingers to press it into an even layer.
  6. Spread the cherry pie filling evenly over the bottom crust. Ensure the cherries are distributed well so every bar gets plenty of fruit.
  7. Drop the remaining dough by teaspoonfuls over the top of the cherry filling. It won’t cover the cherries completely, which is fine. Bake for 30 to 35 minutes, or until the top is light golden brown.
  8. Whisk together the powdered sugar and milk until smooth. Once the bars have cooled slightly, drizzle the glaze over the top in a decorative pattern.
