  • 1 can (15 oz) 100% Pure Pumpkin Puree
  • 1 1/2 cups Semi-sweet Chocolate Chips
  • 1/2 teaspoon Pumpkin Pie Spice (optional, for extra flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking and to ensure even browning.
  2. In a large mixing bowl, combine the dry spice cake mix and the entire can of pumpkin puree. Use a sturdy spatula or a wooden spoon to stir the mixture until it is smooth and no dry streaks of flour remain. The batter will be thicker than cake batter but stickier than traditional cookie dough.
  3. Gently fold in the semi-sweet chocolate chips and the extra pumpkin pie spice if you are using it. Distribute the chips evenly throughout the batter so every bite has a bit of chocolate.
  4. Using a cookie scoop or a tablespoon, drop rounded mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart. These cookies do not spread much during baking, so you can lightly press the tops down if you prefer a flatter shape. Bake for 10 to 12 minutes or until the tops are set.
  5. Allow the cookies to cool on the baking sheet for at least 5 minutes before transferring them to a wire rack. This helps them firm up so they don’t break when you move them.
