  • 2 large eggs
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup mashed overripe bananas (about 12 medium bananas)
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and cloves)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard 9×5 inch loaf pan with cooking spray or butter, or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the eggs, pumpkin puree, mashed bananas, oil, sugar, and vanilla extract. Whisk them together vigorously until the mixture is smooth and the sugar has begun to dissolve.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice. Ensuring the dry ingredients are well-mixed prevents clumps of leavening agents in your bread.
  4. Slowly add the dry ingredients into the bowl with the wet ingredients. Use a spatula to gently fold the mixture together. Stop mixing as soon as no streaks of flour remain; overmixing will make the bread tough.
  5. Pour the batter into your prepared loaf pan and smooth the top with a spoon or spatula. You can tap the pan on the counter a few times to release any large air bubbles.
  6. Place the pan in the center of the preheated oven. Bake for 50 to 60 minutes. To check for doneness, insert a toothpick into the center of the loaf; it should come out clean or with just a few moist crumbs attached.
  7. Remove the pan from the oven and let it sit on a wire rack for at least 10 minutes. This allows the structure to set. Carefully remove the bread from the pan and let it cool completely before slicing for the best texture.
